Lachha Paratha indian bread

INGREDIENTS:

Makes 6:

+ 300g all-purpose flour and extra for dusting
+ 1 Tsp. garlic powder
+ 2 tbsp oil
+ Cup of hand-hot water
+ Oil for cooking and brushing on the dough

Optional:

+ Roots and Shoots Kerala Aubergine Curry

METHOD:

STEP 1:

Add the flour, garlic powder, oil to a bowl and mix with your hand until combined as well as you can.  The dough will be shaggy and still quite dry.  Add in the water a little at a time and mix the dough with your hands, until it comes together.  You may need more or less water depending on your flour. When it is somewhat of a rough ball, tip it out on a floured surface and start to knead the dough, for about 5-8 minutes until it is smooth. Place the ball of dough in a lightly oiled bowl, cover with cling film and allow to rest for 30 minutes.

STEP 2:

Divide the dough into 6 even pieces (use a weighing scale for more accurate weight.) Roll each piece into a small ball, allow to rest for 30 minutes and place in a bowl again with the cling film covering the dough balls

STEP 3:

Roll each ball of dough out to about 25cms across with a rolling pin, dusting the rolling pin and surface. If you are not happy with the shape you can stretch the dough with your hands. When a circular shape is achieved, brush it with oil and gently dust with flour. Starting at one end, start to fold the dough (width 1.5 cm approx) like an accordion. stretch the pleated dough by slapping it off the surface and stretching with your hands  as much as possible. Roll the pleated dough like a cinnamon roll, securing the end by pressing gently at the underside. Dust the rolled dough portion with flour and start rolling gently into a thin circle.

STEP 4:

Heat a pan and add in a drizzle of oil, place the dough circle in the pan and cook on each size for about 2-3 minutes until golden. Keep warm in a warming oven while cooking each one and serve when all flatbreads are cooked. 

STEP 5 (OPTIONAL):

Heat your Roots and Shoots Kerala Aubergine Curry according to the pot instructions, and serve with your warm, homemade Lachha Paratha! 😊
