BAKED SWEET POTATO

INGREDIENTS:

Per Person:

+ 1 medium sweet potato
+ ¼ spring onion, sliced
+ 1 dollop of coconut yogurt
+ ½ tbsp oil of choice
+ Salt and pepper to taste

Optional:

+ Roots and Shoots Green Lentil Dahl

METHOD:

STEP 1:

Preheat the oven to 180c. Pierce the potatoes with a fork several times. Drizzle over the oil and massage into the potato to cover the entire surface. Place the potato on a lined ovenproof dish and cook for 30 mins, do prod the potato with a skewer to ensure the potato is fully cooked.

STEP 2:

Cut a cross in the top of the cooked potato and pull apart slightly, add a dollop of coconut yogurt, spring onion and season to taste

STEP 3 (OPTIONAL):

Heat your Roots and Shoots Green Lentil Dahl according to the pot instructions, and serve with your baked sweet potato! 😊
